Methi Muthiya (Crisp Fenugreek Rolls)

A popular healthy Gujrati snack which suits perfect for morning and evening.

Serves – 4

Preparation time: 15minutes

Ingredients:

1 cup – Wheat flour

1/4 cup – Semolina (Rawa)

1/2 cup – Cooked rice (Rice can be of a day before also)

1/2 cup – finely chopped fenugreek

1/2 cup – crushed lauki (bottle guard) —————— (optional)

1 small piece – Garlic

3-4 colves – Ginger

2-3 – Green chillies

Pinch – Soda

Salt, 1/4 tsp- sugar, 1 tsp – Garam Masala (all spice powder), 1 tsp – red chilli powder, 1 tsp – Chat Masala

1/2 Tbsp- Oil

Tadka:

1/2 Tbsp- Oil, Cumin seeds, green chillies, Nylon sev for Garnish, Pinch – Asafoetida, lemon juice

Method:

Mix wheat flour, lauki, methi, rawa, rice, ginger-garlic chilli paste, soda, all spices in one bowl

Add little water till dough is ready             muthiya---1

Now give them long shape and keep in a Microwave safe bowl with half lid covered (to allow steam pass easily)

Put into the Microwave on 100% for 3mins approx —– (if undone, then Micro again for a minute)

Tadka:

In a pan, allow the oil to heat and add cumin seeds to crackle, add green chillies now

Cut small pieces of muthiya and add in the pan

Now add lemon juice and mix again

Generously add nylon sev

Cover it for 3-4 mins of medium flame to make it crisp                                            muthiya---3

 

Chilli Momos

Momo is a Nepali Cuisine Recipe, basically the steamed dumplings

Serves: 20

Preparation time: 40 minutes

1 cup – Maida (all purpose flour)

1 tbsp – Oil

Pinch of Salt

Water for kneading dough

For stuffing:

1 cup – Paneer/ tofu (Crumbled)

1/2 cup – fried(mashed) beans

1 ½ cup – Vegetables finely chopped (of choice)

1 tbsp garlic and ginger paste

1 tsp – soy sauce

1 tsp – Chilli sauce

Salt as per taste

Oil for frying

Method:

1) Add Maida, salt, 1 tsp oil in a bowl to make the dough. All the dough to rest for 30 mins, covered with plastic

2) For Filling: take crumble paneer, chopped (2-3 vegetables of choice), beans and mix well

3) Make small balls off the dough and roll it in round shape (TIP: Keep the edges thin rather centre for momo’s filling)

4) Add filling and give it attractive shape of choice

5) Prepare steamer for 10minutes and add the momo’s to it

6) Steam momos for 10-15minutes and serve hot with any favorite dipping/sauce

1) Take 2 tsp oil in a pan and fry the momos

2) Now add schezwan sauce and garnish with coriander/spring onions to serve

Khaman Dhokla

Dhokla is famous Gujrati snack preparation which can be made in many ways. It is healthy and filling snack, ideal for breakfast and brunch.

Servings: 4

Preparation time: 20minutes

Ingredients:

1 ½cup – gram flour (Besan)

1/2 cup – semolina (sooji/ rava)

Salt to taste

Red chilly powder as per taste

Turmeric – a pinch

Asafoetida (hing) – 1 tsp

Sugar – 1 tsp

Eno powder – 2 to 3 tsp

Mustard seeds, cumin seeds

Coriander leaves

Oil for frying

 

Method:

  • Add all dry ingredients like gram flour, semolina, salt, red chilly powder, turmeric, sugar in a bowl
  • Now add water and make batter
  • Add Eno powder when ready to cook
  • Apply oil in the Idli pot and pour the Dhokla mixture
  • Allow it to steam for 10 – 15minutes and then cool
  • Cut into pieces and fry slightly in a pan
  • Add mustard, cumin seeds, asafoetida in the oil to fry
  • Garnish with coriander leaves and serve hot with ketchup or Mint (pudina) chutney

Dabeli (Spicy Stuffed Buns)

Preparation time: 20minutes

Ingredients

1/2 kg potatoes
4 onions
garam masala & Dabeli masala
1 cup – peanuts & pomegranate
2 tsp  –  salt
2 tsp  -  red Chilly powder
4 tbsp – (tamarind) emlee and gur chutney
2 tbsp – lasoon chutney

Method:

  • Boil the potatoes and mash them after cooling and keep aside.
  • Heat the pan and add ½ cup oil to fry the peanuts and add the dabeli masala. Add pinch of salt and sugar
  • In the mixture add lason chutney and allow sizzling
  • Add garam masala, tamarind (emlee) chutney and the red chilli powder.
  • Now put the mashed potatoes.
  • Fill it in bun with chopped onions, fried peanuts.
  • Garnish with pomegranate and Serve hot

SALTED COOKIE TARTS

Ingredients

5 – 6 – any salted cookies ( round or square) shaped

4 Teaspoon – Eggless Mayonnaise

1 small – sliced onion

Namkeen/ nylon sev /bhujia sev

2 drops – Lemonade in Mayonnaise

Salt & red chillies flakes

Coriander chutney/Ketchup – optional

 

Method:

Add Mayonnaise, Lemonade &Image0498 red chillies flakes in a bowl to mix well

Place 5 – 6 salted cookies on a plate and put Mayonnaise spread on it

Place the sliced onions and sprinkle little salt

Add little coriander chutney/ ketchup

Garnish with Namkeen/ nylon sev /bhujia sev to serve

Note: Have 1 at a time without breaking before taking in the mouth to enjoy this tasty snack

MASALA KURMURE

Servings: 4

Preparation time: 10minutes

 

Ingredients

masala puffed rice

Healthy evening snack

4 medium handful – kurmure (puffed rice)

2 teaspoon – oil

1 small – thinly diced onion

50 gms – thin nylon sev/bhujia sev

1 teaspoon – water base Chat masala (mix chat masala in water) OR Lemonade

Turmeric powder, salt, red chillies

Finely chopped coriander

 

Method:

Add 2 teaspoons of oil in large pan

Add turmeric powder to oil and slowly put the kurmure into pan (till all turn light yellow)

Remove off flame and add thinly chopped onions

Now mix the water base chat masala, salt, red chillies to the kurmure

Garnish with sev and coriander
