Refreshing Basil (Tulsi) Drink

Tulsi leaves are natural blood purifier which is good for hair and skin.

Serves: 2

Preparation time: 10minutes

Fresh Tulsi drink

Ingredients:

1 cup – Fresh basil leaves

1 tsp – Grinded pudina (mint) leaves paste

Lemon juice

Sugar as per sweetness

2 cups – Water

Method:

ü  Take fresh tulsi leaves and chop them

ü  Add tulsi leaves, pudina paste, sugar and water in the grinder

ü  Add little more water and grind again

ü  Squeeze 1 lemon and grind again

ü  Strain out in ice cubes filled glasses

PANI PURI RECIPE

Serves: 10-15
Preparation time: 20minutes

Ingredients:

For Purispani puri -----1

1 cup – Rava

3 tbsp – Maida

1/4 tsp – Baking soda

1/2 tsp – salt

Oil for deep frying

 

For PaniPANI PURI---------2

1/2 cup – Imli Pulp

2 Cups – Water

2 tbsp – Roasted Jeera powder

2 tbsp – Unroasted Jeera powder

1/2 cup – Coriander leaves

3 Green Chillies

1 Cup – Pudina

1 tbsp – Kala Namak (Black salt)

1 tbsp Boondi

2 tbsp – Crushed Gur (Jaggary)

For stuffing: 
2 – Boiled potatoes

1/2 cup – small chickpeas

Salt as per Taste

Green & Red Chutney

Method: PANI PURI-----3

To Make Puri:

Mix Maida, sooji, soda in a large bowl.

Add warm water to knead stiff dough

Cover with Muslin cloth and set aside for 30minutes

Make small balls and roll thin small rotis

Round shape can be made with help of cutter or any container lid

To Make Pani:

Grind coriander, pudina and green chillies into thin paste.

Add all spices, green paste in the water. Now dissolve jiggery properly. Now adjust the tanginess as per taste

Strain through wire strainer if required

Points to remember before frying :

The oil should be hot enough such that puris puff up well

Add only 3-4 puris at a time

Press them from the centre while frying

Take puris out on the kitchen towel

Let the puris cool and then use (can be stored in air tight containers).

Instant Paneer Butter Masala

Serves: 4

Preparation Time: 15 minutes

  • This Recipe is prepared in Microwave

Ingredients:

200 gms  – Paneer

4 – Medium Onions

1/2 – Capsicum (sliced)

Small piece – Ginger

3-4 cloves – Garlic

3-4 – Green chillies

1/2 cup – Milk

2 tbsp – Butter

2 tbsp – Oil

Salt, Red chilli powder, Garam Masala

Pinch of Red color ————– (optional)

Microwave cooked paneer

Method:

Make paste of 2 onions, ginger, garlic and green chillies

Take 2 tbsp of oil in a Microwave safe glass bowl and heat for a minute in Microwave

Now add the onions, ginger, garlic and green chillies paste to it and Microwave again for 3minutes

Now add milk and red chillies powder and Microwave again for a minute

In a separate bowl add butter and Microwave for a minute

Now add 2 onions and 1/2 capsicum sliced into the butter & microwave for 3 minutes

Add all this to the 1st bowl and put salt, Garam Masala and red color now

Mix well and Microwave for a minute

Now add the paneer cubes to it and Microwave for a minute again

Serve Hot

Bread Ras Madhuri

Serves: 3-4

Preparation Time: 20 minutes

2 cups –Milk

1/2 cup- Malai (cream)

1 tbsp – Milk Powder

2 tbsp – custard powder

4 tbsp – sugar

1/ 2 cup – chopped dryfruits ( almonds, pistachios or any other)

Elaichi powder

1/4 tsp – Vanilla essence ———————————— (optional)

Method

Making of Ras madhuri

Add 2 cups Milk in a bowl and put in Microwave for 5mins

v  {Put on gas which may take time but move till the milk reduces to slightly thick consistency like in kheer}

Now add custard Powder, sugar, vanilla essence to the Milk and Microwave again for 2minutes

v  (same pattern can follow if done on gas)

Now add dryfruits, elaichi powder and put on Microwave for a minute again

Take 8 -10 slices of bread

Cut into circular shape using any small bowl

Mix milk powder, Malai and elaichi powder in one bowl and mix well

Add this mixture on one bread coin and put another on top

Make all ready and set all aside

Take a new bowl and dip the bread coins in the Custard Milk

Now pour the remaining mixture of custard Milk on top and allow setting for 5-10minutes

Serve the sweet Bread Ras Madhuri

Chocolate Marble Cake

Serves: 5-6

Preparation Time: 30minutes

Ingredients

1/2 cup – Maida (all purpose flour)

1/2 cup – Milk Powder

3/4 cup – Grinded Sugar

1/3 cup – Butter/Oil

1/2 to 1 cup – Milk

Warm water  -If required (for batter)

1 ½ tsp – Baking Powder

1 – Vanilla/ Chocolate/Pineapple essence

1/2 tsp – Soda

1 tbsp – Cocoa Powder

1 tbsp – Drinking Chocolate Powder (optional)

Method:

Add Maida, Milk powder, sugar, cocoa powder, baking powder, soda in one bowl

Add Oil/butter, Milk, Vanilla Essence into another

Now slowly add the wet ingredients into the dry slowly and mix well

You can even grind/blend mixture to remove lumps

Grease the aluminum cake pot with butter/oil and dust Maida

Pour the mixture into the pot and preheat the Microwave Oven on from 150 degree to 170 degree for 5minutes

Put the pot inside and set same temperature for minimum 20minutes (As per oven)

Insert a toothpick in middle and check if cake is baked completely

Once done, set aside the cake pot for 1/2 hour to cool down

Decorate, cut and serve

Methi Muthiya (Crisp Fenugreek Rolls)

A popular healthy Gujrati snack which suits perfect for morning and evening.

Serves – 4

Preparation time: 15minutes

Ingredients:

1 cup – Wheat flour

1/4 cup – Semolina (Rawa)

1/2 cup – Cooked rice (Rice can be of a day before also)

1/2 cup – finely chopped fenugreek

1/2 cup – crushed lauki (bottle guard) —————— (optional)

1 small piece – Garlic

3-4 colves – Ginger

2-3 – Green chillies

Pinch – Soda

Salt, 1/4 tsp- sugar, 1 tsp – Garam Masala (all spice powder), 1 tsp – red chilli powder, 1 tsp – Chat Masala

1/2 Tbsp- Oil

Tadka:

1/2 Tbsp- Oil, Cumin seeds, green chillies, Nylon sev for Garnish, Pinch – Asafoetida, lemon juice

Method:

Mix wheat flour, lauki, methi, rawa, rice, ginger-garlic chilli paste, soda, all spices in one bowl

Add little water till dough is ready             muthiya---1

Now give them long shape and keep in a Microwave safe bowl with half lid covered (to allow steam pass easily)

Put into the Microwave on 100% for 3mins approx —– (if undone, then Micro again for a minute)

Tadka:

In a pan, allow the oil to heat and add cumin seeds to crackle, add green chillies now

Cut small pieces of muthiya and add in the pan

Now add lemon juice and mix again

Generously add nylon sev

Cover it for 3-4 mins of medium flame to make it crisp                                            muthiya---3

 

Microwave Cooking made Simple

There are many myths about Microwave cooking like:

Waves kill the nutrients of the food and make it unhealthy

Microwave cooking cause Cancer, heart problems and more

Overcoming the Micro wave cooking MYTHS:

  • Microwave Cooking is when the food cooked is by the micro-waves and not regular gas which has (butane & iso- butane)
  • Microwave cooking is healthy and problems free if the food cooked gets the standing time for at least 10 minutes
  • Immediately consuming the microwave cooked food may also have the waves. Therefore, allow it to cool for 5-10minutes till the waves which create steam get evaporated. DO NOT CONSUME INSTANTLY
  • Micro wave cooking involves les soil and less time, which is very useful.
  • The Microwaves go inside the food or object kept till 2.5 inches
  • Therefore, Micro wave cooking does not harm to health if the food is cooked well and given required stand by time.

Tips for Microwave Cooking

Most of the Microwaves will have 4 main options namely:

Microwave, Grill, Convection, Combination

Microwave – In which food in cooked by the micro-waves.

  • Click on the Microwave Button and see the maximum Power it shows
  • Mostly it will be 100% but you can either increase or decrease with same button
  • When there is no further power after a certain point then that is highest power. Similarly it will be when you reduce the power, after displaying minimum will either directly show maximum or remain stable
  • This mode should not be used empty because the waves will be released and reflect back, reducing the life of Microwave

Microwave Bowl

 

Note: Only Microwave safe plastic bowl and glass Bowl (mainly Borosil bowls) should be used

 

 

 

Grill – In which the food is, grilled (gets brown color) on top like in pizzas, Roast chicken, Paneer Tikka & more. Grilling is done with help of the rod which is on top in the Microwave. Therefore, grilling stand is provided with Microwave Oven.

  • Click to this button in your Microwave
  • Either it will show G-1, G-2, G-3 and so on OR
  • If not then just set the time accordingly as now you are in the Grilling mode

Note: Only Metal and Glass can be used in Grilling Mode

Convection – In this mode the Microwave, gets converted into an Oven which allows you to make Bake easily.

  • Click on the Convection button in the Microwave
  • Now you see the Temperature setting mainly starting from 110 degree centigrade till 200 degree or more (varies with each brand of Microwave)
  • You can Preheat the Oven at certain temperature, without any bowl

OR

If not required, just directly start baking Cakes, Pie’s, cookies and lots more as instructed in your User Manual.

Note: Metal, Silicon Cake pots can be easily used

Combination –

The mode in which either 2 of the 3 modes (microwave, grill, and convection) will be used as per requirement of food cooked. It is mostly used for Non vegetarian and less for vegetarian food.

  • Click on the Combination mode
  • This mode allows you to select 2 modes for cooking
  • If you set 30% Power for Microwave then Grill automatically sets for 70% ( depending on what is being cooked)

 

Angoori Lassi – Apt summer heat quencher

A popular chilled yoghurt grape drink serves perfect for summers. This creamy drink is perfect to arrest the summer thirst.

Serves – 2

Preparation Time: 10 minutes

1 1/2 cup – unsweetened yoghurt

1 cup – crushed ice

1/2 tsp – cumin seeds

3 tsp – sugar

1 cup – chopped black/green seedless grapes (WE used green grapes)

Pinch of Salt

Mint leaves to garnish

Method:                                        angoori lassi---------3

Roast the cumin seeds on medium flame till aromatic. Now grind into powder form mixture

Put the yogurt, grapes, crushed ice, cumin powder, salt, sugar into the blender

Add chopped grapes at the bottom of the drink glass

Pour the drink into chilled tall glasses and garnish with cumin powder and mint leave

Shahi Mushroom

Serves: 3-4

Preparation time: 30 minutes

150 gms – Mushroom

4 – Onions (chopped)

7-8 – Tomatoes

Ginger – garlic paste

2 – Green chilies

Salt to Taste

Red chilly powder

Garam Masala

Sugar

1 cup- Malai

1/2 – cashew nut paste

3 Tbsp- butter

Method:                                                                  mushroom-shahi-masala

Cut mushrooms into equal pieces

Chop other vegetables also

Heat the ghee in small pan till it turns pink

Add ginger-garlic paste, tomato, green chillies

When tomato secretes the oil then blend it in the mixer

Now cook this mixture in a pan and add red chilly powder, spices, sugar, salt, cashew nut paste

Now cook for 5minutes on medium flame

Add sliced mushrooms in it

Remove it off flame when softens

Serve hot with rice to Naan

Puran Poli

A traditional kind of sweet popular in Maharashtra, Andhra Pradesh, Karnataka, Goa and Gujarat of India

Serves: 4

Preparation Time: 20 minutes

3 cups – Chana Dal

200 gms – Wheat Flour

4 cups – Sugar or Jaggery (Gud)

1 cup – All purpose flour (Maida)

4 tsp – Oil

Grated Nutmeg

50 gms – Powdered Elaichi

Wash Chana Dal properly in appropriate quantity of water

Drain the excess water to add jaggery/sugar

Now cook the dal on low heat till the mixture attains thick consistency

Allow this mixture to pass through the sieve while hot only

Now add the grated cardamom & nutmeg powder

Now mix well to keep it aside to cool

Now mix Maida, wheat flour, oil and water to make smooth dough

Set the dough aside for 2-3 hours

Make small balls of gram mixture and put inside the flour dough

Now roll it slightly like any paratha (Stuffed)

Cook on any flat tawa just like roti’s & fry properly
